POKE ‘N POUR GINGER CAKE
I believe it was one Christmas eve at my sister Stephanie’s that we were served this flavorful ginger cake. It has now become a tradition at Christmas time for us. It tastes similar to Christmas pudding, but an updated version. The kids all love it.
If you want an even stronger ginger flavor, add ½ cup of chopped candied ginger.

POKE ‘N POUR GINGER CAKE
Cook Time: 45 to 55 minutes

Ingredients
- 2 ¼ cups flour
- ¾ cup firmly packed brown sugar
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 tsp ginger
- ½ tsp soda
- ½ tsp salt
- ½ tsp mace or nutmeg
- ¼ tsp cloves
- ¾ cup water
- ¾ cup oil
- ¾ cup molasses
- 2 eggs
- 1 cup firmly packed brown sugar
- ½ cup butter
- 1/3 cup water
Instructions
Preheat oven to 350 degrees
Prepare your Bundt pan. I recommend you spray and flour it.
In a large bowl, blend all the cake ingredients at low speed until moistened. Beat 3 minutes on medium speed. Pour into grease pan.
Bake 45 to 55 minutes.
Butter SauceIn small sauce pan, combine all ingredients. Heat until butter melts. Prick hot cake deeply every inch with long-tined fork. Spoon hot sauce over hot cake in pan. Let sit for 30 minutes, invert onto serving plate. Serve warm or cool.
