ALMOND JOY NO BAKE PALEO DROP COOKIES
I didn’t have any coconut butter and had wanted to make these treats one day so I substituted the coconut butter with real butter. It works fine. These are great to take hiking. We took them on one hike last summer up at Lake Louise and found that they do end up a little mushy after about 4 hours, but they are a great snack. My niece has made them for the kids too and they love them. I decided to try the apricots in them one time, just because I needed to use them up and thought that it would be a good combination. It is!
ALMOND JOY NO BAKE PALEO DROP COOKIES

Ingredients
- 1/2 cup almond flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup coconut butter OR butter (not coconut oil)
- 1/4 cup honey
- 1/2 cup chocolate chips
- 1/2 tsp vanilla extract
- 1/4 tsp sea salt
- 1/8 tsp almond extract (optional)
- ¼ cup chopped dried apricots (optional)
Instructions
Combine all ingredients in a bowl and mix well until completely combined. I use either my hand mixer or the food processor.
Form into 1 to 2 inch balls and place on parchment paper. Flatten balls or not.
Allow cookies to chill in the refrigerator for at least 60 minutes before serving. Keep in the frig.
Makes 16 to 18 small cookies.
