BAKED PARMESAN CHICKEN (Gluten-free or Not)
This is recipe from my mother-in-law. From years of Sunday dinners, I have a lot of her recipes that she has passed on to me. This is one of my favorite. I have adapted to gluten-free and it’s a success.
This is like the old shake-and-bake chicken we used to have when we were growing up. Does anyone actually use that stuff anymore? This version can be made gluten-free or not, both taste incredible. You’ll know what I mean within minutes of popping it in the oven. The smell is incredible. It fills the house. That’s what I remember – having to patiently wait for it to cook.
It’s simple enough that you can cook during the week or serve it for a dinner party. I like to have risotto or a quinoa dish and veggies with it.
Now that the kids are not home, I have leftovers and these are great in salad, a wrap
You don’t just have to use chicken breasts – try the recipe as chicken wings. Change up the cheese. Use your favorite hard cheese – Romano or Asiago cheese work well too.

BAKED PARMESAN CHICKEN (Gluten-free or Not)

Ingredients
- ½ cup almond flour OR fine bread crumbs OR cracker crumbs
- ½ cup finely shredded parmesan
- ¾ tsp paprika
- ¾ tsp salt
- ¼ tsp pepper
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp celery salt (optional, I ran out and it taste just as good without)
- ¼ tsp oregano
- 3 tbsp melted butter
- 5 chicken breasts
Instructions
Preheat oven to 350 degrees.
Line a baking pan with parchment paper or foil.
Mix all almond flour, grated cheese and spices together in a bowl.
Place melted butter in a bowl.
Pat dry the chicken breasts.
Dip chicken breasts in the melted butter, then in the crumbs.
Place on baking sheet.
Bake for about 40 minutes or until juices run clear.
