BREAKFAST HASH WITH MONTREAL SMOKED MEAT

Instructions
HASH BROWNS – real ones1 potato/person
Boil potatoes the night before. Cut into bite size pieces, fry in butter with salt and pepper. Add your favorite spice.
MONTREAL SMOKED MEAT100 g/person Montreal Smoked Meat sliced
Roughly chop the meat into strips. Heat in foil in the oven or in a frying pan with a bit of oil.
CARAMELIZED ONIONS1 large onion/person

Slice with your mandolin. You tend to need a lot of onions as they really reduce to next to nothing. Fry over medium heat for about ½ an hour. Turn down the heat if they start to burn. I always keep an eye on the butter – do not scrimp on it.
HOLLANDAISE SAUCEPrepare your favorite packaged hollandaise or... a recipe to come. I’ll have to get Dave’s – it is fabulous!!
FRIED EGGS1 or 2/person
Cook and season using your favorite method.
ASSEMBLECook the potatoes.
Caramelize the onions.
Fry the potatoes, heat the meat and make the hollandaise sauce.
Fry your eggs or grate your cheese.
Assemble on a plate: potatoes, onions and meat. Place egg on top or shredded cheese. Top with hollandaise sauce.
If you choose no eggs and use the shredded cheese you can pop it into the oven and broil it for a couple of minutes to melt the cheese. It will be poutine! Don’t limit yourself to Montreal Smoked Beef. Try different types of meats and cheeses. Be creative.
