CHEESY ONION DIP
Make this dip the day before or a couple of hours ahead of time. The flavours need time to develop and blend. It will make a noticeable difference. If you are not a fan of mayo, increase the sour cream or use plain yogurt.
I caramelized the onion. If you are in a hurry to throw this together, just add green onions or chives. Caramelized onion just adds to the depth of the flavor.

Ingredients
- 1 onion, chopped (or if you use green onion or chives, delete the butter)
- 3 tbsp butter
- 2 pkg cream cheese, softened
- 1 cup sour cream
- 1 cup mayonnaise
- 3 tbsp Epicure 3 Onion Dip Mix or see the bottom of this recipe for a copycat of this mix
- 1 cup shredded old cheddar cheese
- 1 cup shredded parmesan cheese (romano or asiago will work well too)
- 1 tsp garlic powder
- 1 heaping tsp of fresh garlic
- Sea salt & pepper to taste
Instructions
Coat the bottom of the pan with olive oil, or a mixture of olive oil and butter (about 1 teaspoon per onion). Heat the pan on medium high heat until the oil is shimmering. Add the onion slices and stir to coat the onions with the oil. Spread the onions out evenly over the pan and let cook, stirring occasionally.
Copycat Epicure 3 Onion Dip MixI used the real Epicure stuff just because I had it in the cupboard and needed to use some of the Epicure spices I have. I really like their spices - no additives or preservatives. You can actually pronounce every ingredient. So personally, I don’t consider it a waste of time going to a party or calling your local distributor. I don’t sell Epicure. I just really like the quality of the products.
Sometime though you want to make something and of course you don’t have that one ingredient that is required. So here is the copycat version from Mix It Up. Not sure you would need to put the bacon bits and parmesan cheese in, but I will leave that up to you. This 3 onion dip mix adds flavor to quinoa or rice. Just add it to the water or broth when cooking.
