CINNAMON RAISIN BANANA BREAKFAST
Make this the night before and it’s ready to bake when you put the coffee on. I have made it in the morning and let it sit for an hour, but that’s hard to do.
CINNAMON RAISIN BANANA BREAKFAST

Ingredients
- 8 slices of cinnamon raisin bread, cut into ½ inch cubes
- 12 eggs
- 1 cup milk
- 1 cup of maple syrup
- 1 tsp rum (vanilla)
- 6 ripe bananas, sliced
- 1 cup of chopped pecans
Instructions
Prehead oven to 350 degrees.
Spray 9 x 13 glass pan.
Cut bread into cubes
Mix together the eggs and milk.
Pour over the bread. Cover and refrigerate overnight.
Bake uncovered for 35 – 40 minutes.
Topping:Warm syrup in the microwave or on a low heat.
Stir in rum.
Sprinkle bananas/pecan on just before serving and drizzle with syrup.
