COCONUT CHIA SEED PUDDING
This quick breakfast is made the night before. Ready to in the morning with your favourite fruit and nuts. It really tastes more like dessert than breakfast.
COCONUT CHIA SEED BREAKFAST PUDDING PALEO

Ingredients
- 2 tbsp chia seeds
- 1 can full-fat coconut milk
- ¼ cup of unsweetened coconut OR 2 tbsp of unsweetened cocoa
- 2 tsp vanilla
- Fruit of your choice – banana, berries, mango
Instructions
Mix chia seeds, coconut milk, and coconut together. Let it set in refrigerator overnight. The chia seed will have gelled. If your breakfast is too thick, add some more coconut milk or almond milk. Top with fresh fruit and nuts, and enjoy.
