COCONUT PECAN ICING
This is one of my favorite icings. Use this to top off a 3 layer chocolate cake. Use my Idiot Proof Chocolate Cake recipe, make 3 layers, fill 2 layers with chocolate cream cheese mousse and top with coconut pecan icing. The sides are left un-iced. It is one of my creations. It is not too sweet of a cake, it looks fabulous and taste great!
One of my biggest peeves is that cakes tastes like cardboard and the icing is pure sugar with no taste. None of my cakes are like that. If I’m going to go to all the effort of baking and icing a cake, it had better taste exceptionally good. Sickly sweet icing is not ever tolerable. Why would you make or eat that? I usually include icing recipes with the cake, but this is one of those recipes I found long ago and made it into my own.
This recipe is also great to ice and 8 inch pan of brownies too.
