CREAMY CAJUN CHICKEN PASTA
To make this a vegetarian dish, just delete the meat and serve it on the side.
For gluten-free, use your favorite gluten-free pasta or use spiral zucchini noodles. They are delicious.
CREAMY CAJUN CHICKEN PASTA
Ingredients
- 2 boneless skinless chicken breast halves, cut into thin strips (or sausages-chicken sundried tomato)
- 2 tsp cajun seasoning (see my recipe)
- 2 tbsp butter
- 1 thinly sliced green onion (or 1 yellow onion chopped)
- 1 -2 cup heavy whipping cream (or ½ & ½)
- 2 tbsp chopped sundried tomatoes
- ¼ tsp sea salt
- ¼ tsp dried basil (or 1 tbsp fresh)
- 1/8 tsp ground black pepper
- 1/4 tsp garlic powder
- 2 cloves garlic minced
- 2 cups fresh spinach
- ¼ cup grated parmesan cheese
- Your choice of pasta, cooked
Instructions
Place chicken and cajun seasoning in a bowl and toss to coat.
In a large skillet over medium heat, sauté chicken in butter until chicken is cooked.
If you are using a yellow onion, add it chicken and cook altogether.
Note: If you are using sausages, you can pan fry them or roast them in the oven. Cut into slices and add the yellow onion. Sauté until the onion is cooked. You will also need to add the Cajun seasoning just before you add the cream. Let the spices cook for a couple of minutes before adding the cream.
Reduce heat add green onion, heavy cream, sundried tomatoes, basil, salt, garlic powder and black pepper.
Add 2 cups of fresh spinach.
At this point you can simmer for 15 or so minutes and serve. Personally, I like to put the sauce on at least 1 hour before serving and let the sauce simmer away. It really improves with time.
Pour over hot noodles and toss with parmesan cheese.
