GRAINLESS GRANOLA
Be creative – add sunflower seeds, change up the nuts. It is a good recipe to use up those bits and pieces in your cupboard. I will usually use sliced almonds since that is what is usually what I have. Same goes for the ground flaxseed and spices.
I liked to put coconut milk, sometimes a bit of almond milk too, on the granola, let it sit for a bit so the chia seeds absorb the liquid. Add some berries... yummy!
This recipe comes from the Wheat Belly Cookbook. I personally eliminate any or reduce sugar of all types in any recipe. So I did not use any sweetener.

GRAINLESS GRANOLA

Ingredients
- 1 cup raw cashew pieces
- 1 cup raw pumpkin seeds
- 1 cup slivered almonds
- 2 tablespoons flaxseed (I use ground, but the original recipes calls for whole)
- 2 tablespoons chia seeds
- 1 cup unsweetened coconut flakes
- 2 teaspoons cinnamon
- 2 tablespoons coconut oil melted
Instructions
Preheat oven 350F.
Mix everything together but the coconut oil. Add the oil (and syrup/sweetener) and mix together. Spread the mixture on a baking sheet in a ½”thick layer. Bake for 20 minutes, stirring once or until golden.
Just in case... ¼ cup of sweetener equivalent to ½ cup of sugar can be added in with the oil. That is what is called for in the original recipe. I have not tested it out. If you do, it will clump together and can be eaten by hand as a snack.
