HEARTY MUSHROOM BARLEY SOUP
This is another great soup recipe from Karlyn. I remember she made me a pot of this when I was pregnant with my third child and not feeling well at all. It was a life saver then. It has remained in my recipe collection going on 25 years.
My son does not like mushrooms. So if you are serving this to someone with the same affliction, keep the mushroom large so they can pick them out and give them to us who love them.
My youngest daughter, Ashley loves them and always has. Rebecca has learned to love them. One summer day I remember serving them with barbequed steak. It was a special recipe from the neighbours down the street. She and Dave were converted then! Look for the Blue Cheese Mushrooms recipe.

HEARTY MUSHROOM BARLEY SOUP
Ingredients
- 1 tbsp oil
- ¾ lb lean beef/hamburger
- 2 ½ cups mushrooms
- 1 onion, chopped
- 5 cups of beef broth
- 5 cups water
- 1 can tomatoes
- Squirt of ketchup
- 3 potatoes
- ¾ cup of barley
- 1 tbsp Worcestershire
- 1 tsp dried marjoram
- 1 bay leaf
- Salt & pepper
- Fresh parsley
- garlic
Instructions
Cook beef, add mushrooms, carrots, onions and garlic. Cook 3 minutes. Stir in stock, water, tomatoes, potatoes, barley, Worcestershire and spices.
Simmer 1 to 2 hours.
