PALEO MICROWAVE BREAD
This bread takes 5 minutes from start to finish. It’s great first thing in the morning. It’s easy to change up the flavors. I find I throw in frozen berries most of the time, but don’t be afraid to experiment. A couple tablespoons of cheese and bacon (I always keep a bag of pre-cooked bacon bits from Costco in the freezer.) change up the flavours. Try your favorite spice and serve it with chili or soup.
PALEO MICROWAVE BREAD
Prep Time: 2 minutes
Cook Time: 90 seconds

Ingredients (1 serving)
- ⅓ cup almond flour
- 1 tbsp flax meal or coconut flour
- ½ tsp baking powder
- ⅛ tsp salt
- 1 egg, whisked
- 2 tbsp butter (coconut oil or olive oil), melted
Instructions
Grease a mug. Melt butter in a greased mug. Mix in the egg. Add all the rest of the ingredients in and mix with a fork.
Here is where you would add 1/3 cup of frozen berries or blueberries. Or try cheese and bacon.
Microwave for 90 seconds on high.
Cool for a few minutes.
Pop out of mug gently and slice.
