QUICK & SIMPLE MOUSSE – CHOCOLATE & RASPBERRY PARFAITS
This is a great mini dessert. You can change up the fruit or just do one flavor. Use your imagination! The chocolate can be made with dark, semi-sweet or sweet chocolate, depending on the intensity you want.
You will need 12 shot glasses (2 oz each) or small glasses/dessert bowls.
These chocolate filled raspberries are great on top of the dessert. Or just use them as a quick dessert alone.

QUICK & SIMPLE MOUSSE – CHOCOLATE & RASPBERRY PARFAITS

Ingredients
- ½ cup of oreo cookie crumbs (substitute coconut, vanilla wafers... depending of the flavour you want)
- ½ cup of almond meal/flour
- 3 to 4 tbsp of butter melted
- Melt butter in microwave, add the rest of the base ingredients and mix thoroughly. Place about a teaspoon of mixture in the bottom of each glass and press down.
- 1 pkg (8 oz) cream cheese, softened
- 1 cup of whipping cream (if using whipped topping, eliminate any extra sweetener)
- ¼ tsp of vanilla
- Beat softened cream cheese and vanilla until fluffy.
- In a separate bowl, beat whipping cream until stiff. If making two fillings, divide into 2 bowls. Add the fruit or chocolate mixture to the cream cheese mixture. Then fold in the whipped cream.
- 1 cup of fresh/frozen fruit or 3 tbsp of grated citrus rind & 1 tbsp of juice
- Agave/honey – add just enough to sweeten the mixture, if needed
- Crush the berries/fruit, add sweetener to taste.
- 4 oz (1/2 cup) of chocolate or chocolate chips
- 1-2 tbsp milk/cream for melting chocolate
- Melt together the chocolate and cream in microwave until smooth and creamy.
- I usually heat the mixture for 30 seconds, stir, and continue in intervals of heat another 5 to 7 seconds and stir.
- Place 1 teaspoon of base filling in each glass.Fill each glass with mousse ( ½ chocolate, ½ raspberry), top with additional whipped cream and berries or chocolate shavings or a chocolate wafer. I found that if you put 3 chocolate filled raspberries on top of the mousse, you don’t need any additional whipped cream for a garnish. Enjoy!
Instructions
CHOCOLATE FILLED RASPBERRIESUsing half of the chocolate filling recipe above, pour or spoon the chocolate into a small ziplock bag and seal. Cut a small hole in one of the corners of the bag and pipe the chocolate into the centres of the raspberries. Put in the frig.
I place a few on top of the dessert for garnish and place the rest on a plate for nibblies. Two or 3 of them are not enough!!
