Spaghetti Squash Boats with Sausage & Kale
SPAGHETTI SQUASH BOATS WITH SAUSAGE & KALE

Ingredients
- 1 medium spaghetti squash
- 3 chicken & apple sausages, cooked (or whatever sausage you have)
- 1 yellow onion, diced
- 4 cloves garlic, minced
- 1 bunch kale/spinach mix
- 2 cup of grated sweet potato
- 1 cup of chopped tomatoes
- 3 tbsp olive oil
- 1 tub of herb & garlic goat cheese
- ~½ brick of cream cheese (4 oz)
- 1 cup grated cheese – I use the bits and pieces that need to be used up
- Salt and pepper
- Garlic powder
Instructions
Preheat the oven to 400 degrees F.
SQUASHPlace squash in the microwave for 3-4 minutes to soften.
Using a sharp knife cut the squash in half lengthwise. Scoop out the seeds and discard.
Place the halves, with the cut side down, in a 9 x 13. Fill half full of boiling water. Cook until tender, 40 mintues to 1 hour
OR drizzle with olive oil and sprinkle with salt, pepper and garlic powder.
Roast in the oven for 45-50 minutes, until you can poke the squash easily with a fork.
Let cool until you can handle it safely.
FILLING PREPRemove the center stems of the kale and either tearing or cutting up the leaves OR just use a spinach/kale mix that's ready to go.
Heat the olive oil in a large skillet over medium heat. Add the onion, sweet potato and garlic and sauté for 4-5 minutes.
Add the chicken sausage and break apart with a spatula to crumble. (If you pre-cook yours in the oven with the squash, just cut into small pieces and add to the final mixture.) Cook for 10-12 minutes, stirring regularly, until the sausage is browned and cooked through.
Add tomatoes and kale, stir.
Cook for a few minutes more to wilt the kale.
Remove from heat and set aside.
MIXTUREOnce cooled, scrape the insides of the spaghetti squash with a fork to shred the squash into strands.
Combine the squash, vegetable/sausage mixture.
Add the cheese.
Add salt & pepper to taste.
Divide the mixture among the squash shells, and then top with a bit of shredded cheese.
Bake for 20 – 30 minutes until heated through and brown on top.
