STRAWBERRY CHEESECAKE
You can mix up the berries - use raspberries or mixed berries. A great summer dessert.
STRAWBERRY CHEESECAKE
Ingredients
- ¼ cup butter, melted
- 1 cup graham crumbs
- 2 tbsp cocoa
- A few large fresh strawberries, sliced
- 1 pkg strawberry flavored jello (85g)
- 7 g (1/4 oz) unflavored gelatin powder
- 1 cup boiling water
- 425g container frozen strawberries in syrup, partially thawed, then pureed
- 1 package cream cheese
- 1/3 cup icing sugar
- 2 cups whipping cream
- Fresh strawberries
- Chocolate shavings
- Whipped cream
- OR all of the above!!
Instructions
Preheat oven to 350F.
Mix crust ingredients together and press into a prepared 9” springform pan. (Sometimes I line the pan with foil, sometimes I don’t. It’s your choice.)
Bake crust for 10 minutes. Cool.
Once cool, place sliced fresh strawberries around the outside of the springform pan. (Once you put the filling in, the strawberries will be molded into the cake.)
Mix both gelatin powder and jello together. Add boiling water, stir till dissolved.
Mix is partially thawed, pureed strawberries.
Chill till syrupy.
Beat cream cheese and icing sugar until fluffy.
Whip cream and fold into cream cheese mixture
Fold mixture into thickened jelly.
Pour mixture onto prepared crust gently insuring that the strawberries stay against the outside of the pan.
Chill well.
Top with garnish before serving.
