SWEET & SAUCY CANDIED PECANS
Try not to eat all of these before you put them in your salad, top your dessert or just serve them with a bit a cheese, crackers and your favorite wine. I tried these first at Jim and Karlyn’s house. Karlyn and I have been swapping recipes for close to 25 years now. It is always a challenge to find something and interesting to serve when they are over for dinner. This is a one of their recipes and it certainly is a keeper.
I made a couple of changes. The original recipe is with sugar and water. I wanted to try it with agave – it works just a well. So you have a couple of options. I have also increased the nuts too. I just couldn’t waste any of the syrup that was left at the bottom of the pan. Try different nuts too. I did use slivered almonds and they worked well. Well maybe except for Rebecca snacking on them before they even made it to the oven.
Be careful – they disappear from the freezer without warning.

SWEET & SPICY CANDIED PECANS

Ingredients
- 1/3 cup agave
- 2 tbsp water
- ½ cup sugar
- ¼ cup water
- ½ tsp garlic powder
- ½ tsp paprika
- ½ tsp salt
- ½ tsp pepper
- ¼ tsp cayenne
- 4 to 4 ½ cups of pecan halves or slivered almonds (I’m sure walnut pieces would work well too.)
Instructions
Line baking sheet with parchment paper. (Do not skip this or substitute or you will be sorry you did. I speak from experience.)
Combine all ingredients, except pecans in frying pan.
Bring agave or sugar mixture to a boil or medium heat. (If using sugar, heat until sugar is dissolved.)
Remove from heat.
Add pecans and stir until coated.
Spread on a single layer on lined baking sheet.
Bake at 325F for 15 to 20 minutes depending on your oven and the nut you use. Stir twice.
The sugar coating will be slightly crystallized when they are done.
Remove from pan once they have cooled. They should peel right off if you used parchment paper.
These freeze easily.
