WHIPPED POTATO CASSEROLE
This is Grandma Willeen’s recipe from a long time ago. It is an excellent way to use up those extra mashed potatoes. It is so good that even my daughter who doesn’t like potatoes, eats these.
WHIPPED POTATO CASSEROLE

Ingredients
- 2 cups mashed potatoes (3 medium)
- 1-8 oz (250g) cream cheese, softened
- 1 small onion, finely chopped
- 2 eggs, well beaten
- ¼ tsp salt
- 1/8 tsp pepper
- Half a 3 oz (85g) can french fried onion rings, crushed
Instructions
Preheat oven to 300 degrees.
Combine and beat with electric mixer for 3 minutes
Pour into 8” prepared casserole.
Sprinkle onion rings on top.
Bake for 30 minutes.
