WINTER SALAD
You know when you just can’t eat a traditional salad when it’s cold? This is when to have my Winter Salad. It is also a good way to use up the last bits of veggies from the frig. Every time I make this, it’s different.
WINTER SALAD
Prep Time: 5 minutes
Cook Time: 5 - 7 minutes
Ingredients (1 serving)
- A bit of onion
- A hand full of sliced mushrooms
- 1 grated carrot
- 5 or 6 green beans
- A hand full of spinach
- Salt, pepper to taste
- Add you favorite spice – some garlic, some of left over herbs
- Top with a couple of tablespoons of grated cheese.
Instructions
In a large skillet over medium heat, sauté onions and mushrooms in your choice of oil. I usually use a bit of butter and olive oil. Add beans and grated carrots. Season. Add the spinach and cook continue cooking until vegetables to your liking.
Top with your favorite cheese.
