ZUCCHINI ALMOND CAKE
This is another of Marian’s delicious cake recipes. It is very versatile.
ZUCCHINI ALMOND CAKE

Ingredients
- 3 1/3 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 4 eggs
- 2 cups sugar
- 1 ¼ cups oil
- 1 tsp almond extract
- 3 cups grated zucchini
- 1 cup ground almonds
Instructions
Preheat oven to 350F.
10”tube pan or bundt - 60 to 75 minutes
Loaf pans – 60 minutes
Grease and flour pan(s).
Sift together flour, baking powder, salt, soda.
Beat eggs with beater till thick & light colored. Gradually add sugar. Stir in oil and almond extract.
Blend in dry ingredients, mix until smooth. Stir in zucchini and almonds. Pour into pan(s).
Cool in pan on rack for 15 minutes.
GLAZE1 ½ c icing sugar
2 tbsp milk
¼ sp almond extract
¼ c toasted almonds
Mix all glaze ingredients together and drizzle of top.Powered by Recipage
