ZUCCHINI CHOCOLATE BARS
I had some zucchini I needed to use up and ended up with these bars. I like to combination of cinnamon and cloves with the chocolate. These would be a little heavy for a dessert, but they taste like a treat. Healthy too!
There’s very little sweetener in the protein packed bars. You could even eat these for breakfast or take them on a hike. You can substitute protein powder for the coconut flour too. It makes a lot, so throw some in the freezer for those rushed days when you need a healthy bite.

ZUCCHINI CHOCOLATE BARS

Ingredients
- 4 cups zucchini, shredded
- 1 cup almond butter
- 2 ripe bananas
- 6 eggs
- ¼ cup agave or honey
- ¼ cup coconut flour
- 2 cups almond flour
- 2 tbsp cinnamon
- 2 tsp cloves
- 4 tbsp cocoa
- 2 tsp baking powder
- ½ tsp salt
- 2/3 cup raisins
- 2/3 cup chocolate chips
Instructions
Preheat oven to 350F.
Combine almond butter, banana, agave (or honey), eggs and mix well.
Then add coconut flour, almond flour, cinnamon, nutmeg, baking powder and salt and mix well.
Add shredded zucchini, raisins and chocolate chips.
Grease or line a 9 x 13 glass baking dish and bake for approximately 45 minutes. Top should be have a nice crust on it when done.
Let cool before cutting.
Freezes well.
