ZUCCHINI GINGER LOAF
Ingredients (2 loaves)
- 6 eggs
- 1/3 cup molasses
- 2 banana, mashed
- 2 tbsp coconut oil, melted
- 2 tsp vanilla extract
- 2 tsp ground cinnamon
- 4 tsp ginger
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 4 cups almond flour
- 3 teaspoons baking soda
- 2 to 3 cup grated zucchini, water squeezed out (approximately 2 medium sized zucchini)
- ½ cup raisins
Instructions
Preheat oven to 350 degrees.
Line 2 loaf pans with parchment paper.
Combine wet ingredients (not zucchini) and beat on medium for about 2 minutes.
Add spices and mix.
Add almond flour and soda and mix.
Add zucchini and raisins and mix until combined.
Pour batter into loaf pans.
Bake for 50 - 60 minutes until a toothpick comes out clean.
Remove from oven and let cool for 5 minutes.
Cool on wire rack.
