ZUCCHINI SPIRAL NOODLES
Ingredients
- ~1 small zucchini per person
- 2 tbsp olive oil (or less, you just want the noodles lightly coated)
- Salt & pepper
- Garlic powder
Instructions
Spiral your zucchini.
Over medium high heat, add olive oil to your frying pan. Add zucchini and spices to taste. Sautee until just done, not soggy. Depending on how many you are cooking, 1 to 2 minutes is usually about the right amount of time.
Top with your favorite sauce.
There is so much taste in these noodles.
A heavy creamy/garlic sauce is excellent or a quick few tablespoons of jarred pesto with some feta cheese on top is excellent too. Or use your favorite spaghetti sauce. The list is endless. Add to soups or put them in wraps... use them raw. Use them instead of lettuce or pasta in a salad and top with shrimp and avocado. These veggie noodles are so versatile you will wonder why more people don’t eat them. So spread the word – they are delicious!
TIPSThese noodles are easy to cook - timing is everything. They cook fast!
Once your pan is hot, add the oil and noodles. Quickly add you spices. They’re almost are done after 1 minute. There are 2 zucchinis in this frying pan and they were almost over done in 2 minutes.
After 2 minutes the noodles start to get soggy. The liquid from the zucchini starts to release after about 1 minute so have everything ready to go before you start cooking. Remove from the heat. Add you sauce and serve. I added a heaping tablespoon of pesto and a bit of feta.
