IDIOT-PROOF CHOCOLATE CAKE
This is a great base cake that can be made into just about any shape or size. This recipe came from Karlyn back in the days when the kids were little. I remember one time, Alex just threw all the ingredients together, mixed it up and baked it. It still worked. Just don’t ask Rebecca to make this cake. She tried twice in one day and each time it failed. I did not see exactly what she did, but it did not turn out. It has to be my beautiful daughter, not the recipe. And she can cook almost anything but this cake! Yes it was years ago, but she hasn’t tried it since.
Try out the frosting at the bottom of the recipe. It is the best chocolate icing around. I am so fussy when it comes to icings. They have to taste great. I will sometimes add candied chopped pecans to the top. It is like nothing you can buy.
This chocolate cake is great with a chocolate cream cheese filling and topped with Coconut Pecan Icing. I’ve even made it with an orange butter cream frosting. Wow! It is a great combination.
UPDATE: My layer cakes came out of the oven with sunken centres!! Ughh!!! So after a little bit of research, my second attempt turned out. Just make sure you do not over mix the batter. All is good! I guess this recipe is not quite idiot proof. Oh well... it's still very easy to make.

IDIOT-PROOF CHOCOLATE CAKE
Ingredients
- 2 cups flour
- 2 cups sugar
- ¾ cups cocoa
- 1 ½ tsp baking powder
- 1 ½ tsp soda
- 2 eggs
- 1 cup oil
- 2 tsp vanilla
- 1 cup boiling water
Instructions
Preheat oven to 350F.
Prep your pans.
In a large bowl, combine Group A, add Group B and beat with electric mixer for about 2 minutes.
Pour in boiling water and mix until just combined.
Pour into pans.
BAKING TIMES9 x 13 – 35 to 40 minutes
3-8”or 9” rounds – 30 minutes
24 cupcakes – 25 to 30 minutes
1 – 12”round, bake at 350F for 1 hour; reduce oven to 325F for 20 to 25 minutes
BASIC CHOCOLATE BUTTERCREAM FROSTING1 cup butter
½ cup cocoa
¼ tsp vanilla
2 cups icing sugar
2 tbsp milk
Beat butter till creamy.
Add the rest of the ingredients and beat till very smooth.
